Aggy's Christmas Pierniczki

Another staple Christmas-time treat in our household is Agnes' delicious raw vegan recipe for "Perniczki". For the uninitiated, pierniczki are Polish gingerbread cookies and are a traditional festive treat. Agnes' recipe is banana-based and comes in 2 varieties - gingerbread and "choccy" (a less spicy version when you just fancy something sweet). The recipes that follow are enough for a family of four to enjoy for several days over the Christmas and New Year period.


They are a special treat in our home, and I know Agnes wanted to share her recipe and spread the joy. Note: They require a food dehydrator. You can enjoy these plain or with your favourite jam

"Gingerbread" Pierniczki

Ingredients:

  1. 1kg ripe bananas (peeled)

  2. 300g apple (peeled and grated)

  3. 100g carob powder

  4. 50 lucuma powder

  5. 100g raisins (soaked for 1 hour)

  6. lebkuchengewürz - (e.g. cinnamon, cloves, nutmeg) to taste

  7. 1/2 tsp ginger

  8. orange zest

Preparation:

  1. Mash or lightly blend the bananas

  2. Mix in apple, carob, lucuma & raisins

  3. Strit in ginger & spices to taste

  4. Spoon mix into silicon muffin cups, or dollop onto baking paper on dehydrator trays

  5. Dehydrate for 12 hours (high temp. for the first 2-3 hours)


Sweet "Choccy" Pierniczki

Ingredients:

  1. 1kg ripe bananas (peeled)

  2. 150g carob powder

  3. 50g raisins (soaked for 1 hour)

  4. a few drops of vanilla extract (optional)

  5. a few drops of hazelnut extract (optional)

Preparation:

  1. Mash or lightly blend the bananas

  2. Mix in & raisins

  3. Spoon mix into silicon muffin cups, or dollop onto baking paper on dehydrator trays

  4. Dehydrate for 12 hours (high temp. for the first 2-3 hours)
